How to best enjoy our coffee.

Pour Over

The following recipe was built for an Origami M Brewer with Cone Filter but works well with an Orea, Kalita, Hario, Origami with Flat Filter, or Stagg X.

 
Coffee: 18g of medium coffee (4 on Fellow Ode V2 / 550 microns)  
Water: 300g at 205°F  

Steps: 
1. Rinse your filter with hot water and discard the rinse water.  
2. Add 18g of coffee to your brewer.  
3. Start with a 60g spiral pour to bloom the coffee and swirl the bed.  
4. At 30 seconds, pour 80g of water in the center.  
5. At 1 minute, pour another 80g of water.  
6. At 1:30, finish with an 80g spiral pour.  
Goal Finish Time: 2:20 - 2:40  

Adjust Final drain time to specific coffee and taste preference.

Co-Ferments: For Co-Fermented/Anaerobic Coffees we recommend about 15% more coffee (21g instead of 18g with above recipe) to help tame the wild and funky flavors of the coffee and restore it's balance and complexity.

Espresso

 Ratio: 1:2.5  
Dose: 18g of ground coffee  
Yield: 45g liquid espresso  
Shot Time: 32-38 seconds (including 4-second pre-infusion)  
Water Temperature: 205°F  

For a silky, balanced beverage, pair this espresso shot with at least 2oz of your preferred milk. More milk will further tame acidity and enhance the espresso’s natural richness.  

Co-Ferments: For Co-Fermented/Anaerobic Coffees we recommend either updosing 2g more coffee while maintaining final liquid espresso amount, or shortening the shot to a 1:2 ratio. This will decrease overall extraction and help tame the wild and funky flavors of the coffee and restore its balance and complexity.

AUTOMATIC DRIP MACHINE

Recommended Ratios:
- 6 cups water | 58g Ground Coffee  
- 10 cups water | 95g Ground Coffee  

Pro Tips:
✔ Use white flat-bottom filters whenever possible.  
✔ Pre-rinse filters for the best taste.  
✔ Coffee tasting sour? Grind finer to increase brew time.  
✔ Coffee tasting bitter? Grind coarser to decrease brew time.

- 6 cups water | 65g Ground Coffee  
- 10 cups water | 105g Ground Coffee  

French Press

Coffee: 30g of medium grind coffee  
Water: 500g at 205°F  

Steps:
1. Steep for 4 minutes.  
2. Stir coffee and scoop off excess foam.  
3. Plunge 3/4 of the way to the bottom.  
4. Pour coffee and enjoy.

Water: 500g at 205°F
