This juicy Colombian is a masterwork, possessing an incredible amount of sweetness and depth of flavor! It's processed with a natural anaerobic fermentation of 105 hours, followed by a slow drying of almost 20 days in raised beds under the sun. The result is an incredibly rich and sweet coffee with bold notes of apple and vanilla. Throughout the cup you will find undertones of creamy plum and sweet cherry that adds a bright fruity aspect. This creates a rich and fruity cup with a depth of natural sweetness unlike any coffee you have had before!

18g of medium fine coffee (14 on a Baratza Encore/3.3 on Fellow Ode Gen 2)
300g of water heated to 205°
PROCESS:
1. Rinse filter with hot water
2. Discard rinse water
3. Add 18g of coffee
4. 0:00 Spiral Pour 60g of water to bloom coffee
5. 0:30 Center Pour 80g of water
6. 1:00 Center Pour 80g of water
7. 1:25 Spiral Pour 80g of water
