Some coffees don’t just taste good—they change the way you experience coffee. Colombia Peach Co-Ferment was one of those. When we first released it, the response was immediate. Bright, juicy, and deeply expressive, it was one of our most talked-about offerings. And now—after much anticipation—it’s back.
This lot comes from the legendary Jairo Arcila, a producer known for pushing the boundaries of Colombian coffee. His work in Quindío is widely respected for precision and creativity—traits that shine through in every cup of this vibrant co-ferment.
The process begins with ripe Pink Bourbon cherries, which undergo a careful honey anaerobic fermentation, then are infused with real peaches during processing. Over several days of controlled fermentation and drying, the sugars and acids are transformed, unlocking layers of flavor that are anything but ordinary.
The result is a cup that bursts with Peach Jam, followed by rich Brown Sugar, a twist of Lime acidity, and a delicate Floral finish. It’s sweet and tangy, elegant yet joyful—like peach pie with a squeeze of citrus.
This coffee isn’t just returning—it’s making a statement. And we couldn’t be more thrilled to share it again.

POUR OVER BREW GUIDE:
Brew Device: Origami M / Cone FIlter
Coffee: 21g of medium coffee (3.3 on Fellow Ode V2 / 425 microns)
Water: 300g at 205°F
Steps:
1. Rinse your filter with hot water and discard the rinse water.
2. Add 21g of coffee to your brewer.
3. Start with a 60g spiral pour to bloom the coffee and swirl the bed.
4. At 30 seconds, pour 80g of water in the center.
5. At 1 minute, pour another 80g of water in the center.
6. At 1:30, finish with an 80g spiral pour.
Goal Finish Time: 2:05 - 2:20

- 6 cups water | 65g Ground Coffee
- 10 cups water | 105g Ground Coffee
Pro Tips:
✔ Use white flat-bottom filters whenever possible.
✔ Pre-rinse filters for the best taste.
✔ Coffee tasting sour? Grind finer to increase brew time.
✔ Coffee tasting bitter? Grind coarser to decrease brew time.
French Press Guide:
Coffee: 34g of medium grind coffee
Water: 500g at 205°F
Steps:
