This sweet and juicy coffee is one of the flagship offerings produced at the El Vergel estate. This coffee undergoes an anaerobic temperature controlled fermentation for 60 hours. The result is an incredibly sweet, fruity, and unique coffee that is like no other. The final cup explodes with tropical fruits and the flavors reminiscent of fruit punch. All the while an undertone of bright strawberry lingers in the background adding sweetness and complexity. This makes for a coffee experience like no other.

18g of medium fine coffee (10 on Baratza Encore/2.6 on Fellow Ode Gen 2)
300g of water heated to 205°
PROCESS:
1. Rinse filter with hot water
2. Discard rinse water
3. Add 18g of coffee
4. 0:00 Spiral Pour 60g of water to bloom coffee
5. 0:30 Spiral Pour 80g of water
6. 1:00 Spiral Pour 80g of water
7. 1:25 Spiral Pour 80g of water
